At the heart of our focaccia is our own natural yeast, meticulously grown and nurtured over two years. This sourdough starter forms the soul of our bread, lending it a unique, robust flavor that is gentle on your digestive system. Crafted solely from plant-based ingredients, our Sourdough Focaccia is an exceptional example of clean eating meeting superb taste.
Our sourdough focaccia is crafted exclusively from plant-based ingredients, embodying the ethos of clean eating. The high-quality olive oil used in our focaccia is rich in monounsaturated fatty acids, known for their heart-healthy properties. Plus, the addition of herbs provides a variety of antioxidants that can help protect against cellular damage.
Each day's preparation begins in the morning with the feeding of our sourdough starter. As the day progresses, we work on creating gluten chains in the bread, a process lasting 4-5 hours. The bread is then nestled into proofing baskets and stored in the chiller overnight. The following morning, the loaves are baked in a deck oven at a very high temperature, ensuring the crisp outer crust and fluffy inside that our focaccia is celebrated for.
