Okra, also known as "ladies' fingers," is a warm-season vegetable that's rich in vitamin C, vitamin K, and folate. Moreover, it's low in calories and has a high dietary fiber content. Recent research suggests that okra can help manage blood sugar in cases of type 1, type 2, and gestational diabetes.
Storage Tips: Fresh okra should be kept unwashed in a paper bag in the crisper drawer of your refrigerator. It will last about two to three days. For longer storage, okra can be frozen. To prepare it for freezing, blanch the okra first for two to three minutes, cool it quickly in ice water, drain it well, and then freeze it in a single layer before transferring to a freezer bag or container.
Note: Okra is a unique vegetable due to its texture. When cooked, it releases a sticky substance that can be used to thicken soups and stews, setting it apart from most other vegetables. When cooked quickly, as in stir-frying or grilling, it doesn't release this substance, and instead, you get the benefit of its crisp, grassy flavor.
